Learning Outcomes
Prepare a range of espresso-based beverage orders under time constraints
Operate and maintain a commercial espresso machine to prepare a range of espresso beverages to a correct standard.
Bake a range of cakes, sponges and scones suitably packaged for sale in The Pantry or at a market day event.
Understand the importance of yield when applied to baked and preserved goods.
Prepare cook and store a range of preserves in accordance with Food safety practices.
Monitor and record critical control points in accordance with a food safety programme.
Prepare and serve a range of cooked food items and maintain counter and service areas.
