Fine food for 90 as team prepares for Wales

The New Zealand Culinary team undertook their final practice before heading off to Wales for the Welsh International Culinary Championships, treating 90 CPIT staff and guests to a three course meal at Visions on Campus on Friday.

CPIT has provided the facilities and support for the team, which includes chefs, tutors and students handpicked from around the country. CPIT graduates include multi award winning chef and Team Vice-Captain, Darren Wright, who recently opened Chillingworth Road restaurant in Christchurch and Zane Nuestroski who now works at The George Hotel.

CPIT Professional Cookery Tutor Neil MacInnes is the Team Coach/Manager and will travel with the team to Wales. He was pleased with the final practice run.

“Overall the practice went really well for us. It gave us the opportunity to identify some production aspects that we could improve and identified a small issue with the dessert, which was very quickly corrected,” he said.” The combinations across the whole menu are excellent - obviously we can’t reveal what the menu is, but we can say it is up there with the best we have produced in competitions, with great tastes and a clean, modern presentation style.”

The team is required to produce a three course meal for 90 covers in three hours. The New Zealand Culinary Team is a professional, not for profit organization, dedicated to the educational and social advancement of chefs and cooks in New Zealand and throughout the Pacific Region. Major partners for the team include Fonterra, Nestle Professional and United Fisheries.
