Not so humble pie for national competition
Dave Bradley's hangi-style pie is anything but humble. The CPIT cookery tutor created a mouth-watering new pie along with colleague Stan Tawa this week for the 19th Bakels Supreme Pie Awards.
Whilst working with his previous employer, Copenhagen Bakery, Dave was part of a team that won "a few golds, silver, bronze and highly commended" in previous years of the competition. Now representing CPIT, Dave was determined to co-create a new twist on the humble pie.
"The main filling is manuka smoked chicken with kumura and pumpkin, then you have a watercress, sage and thyme stuffing, which is unusual for pie. The stuffing sits on top of the filling, under the lid.
Besides originality, the technical requirements were clear. "You want even lamination, no shrinkage of the pastry on top, 300g in weight, an even filling on gravy to meat and a nice colour." Judging happens this Friday.
When not baking unique pies, Dave is loving teaching cookery students at CPIT. "I get great satisfaction from teaching the students," he says.
